Procedeu de imbunatatire a calitatii carnii
Un produs din carne stabilizat si imbogatit nutritional este preparat introducand o dispersie coloidala apoasa de particule de proteine animale insolubile si a unui liant care se instaleaza la temperaturi de gatit specifice in structura tisulara a unei mase solide de carne animala,de preferinta din aceeasi specie .Procedeul poate fi utilizat pentru a imbunatati caracteristicile carnii de calitate scazuta,pentru a creste randamentul produselor din carne,pentru a creste baza totala de proteine a produselor din carne si pentru a reduce pierderile de la gatitul carnii.
Method of improving meat quality
A nutritionally enriched and stabilized meat product is prepared by introducing an aqueous colloidal dispersion of insoluble animal protein particles and a binder which sets up at cooking temperatures into the tissue structure of a solid animal meat mass,preferably of the same species.The process can be used to upgrade low quality meat cuts,to increase the yield of meat products,to increase the total protein base of meat products and to reduce cooking losses.
