Procedeu de preparare a unui produs alimentar din carne tip sunca presata.

Produsul conform inventiei  se prepara din piept de porc cu soric si carne macra rezultata la fasonarea carnii transate.Produsul fiert poate fi afumat,racit ,feliat,ambalat.Timpul de pastrare la raft este de 3-4 ori mai mare decat pentru sunca clasica.Produsul are continut redus de sare,continut imbogatit de calciu,raport echilibrat calciu:fosfor,continut substantial redus de nitrozamine. Produsul este mai ieftin decat sunca presata clasica din pulpa de porc.

Method of preparing a pressed ham - type meat food product

The pork meat product resembling lean ham according to the invention is prepared from pork deboned  belly  which contains  a thin layer of fatty tissue and a slab of rind and pork scrap meat pieces or chunks..The cooked product can be smoked,cooled,sliced and packaged.The shelf time is three,four-fold  than for classic ham.The product has a reduced level of sodium chloride,improved content of calcium, balanced calcium :phosphorus ratio,substantially reduced  of nitrosamine content.The product is cheaper than classic pressed  pork ham.
